300 g Kvarg (quark) 0.2% fat
Protein Source
30 g Vanilla or unflavored whey protein powder

1 tsp Lemon zest
1 tbsp Fresh lemon juice
1-2 tbsp Erythritol or preferred sweetener
100 g Fresh raspberries
20 g Wholemeal digestive biscuits (or graham crackers)

In a medium bowl, combine the kvarg, protein powder, lemon zest, lemon juice, and sweetener. Whisk until completely smooth and well combined. Ensure no lumps of protein powder remain.

Gently fold in half of the fresh raspberries into the kvarg mixture.

Divide the mixture evenly into two small serving bowls or ramekins.

Crush the digestive biscuits (or graham crackers) into small crumbs. You can do this by placing them in a Ziploc bag and crushing with a rolling pin, or using a food processor.
