In a medium bowl, combine the crushed digestive biscuits and melted coconut oil. Mix well until the crumbs are evenly coated.
Divide the biscuit mixture evenly into two small dessert glasses or ramekins. Press firmly into the bottom to form a crust.
In a separate bowl, combine the quark, vanilla protein powder, lemon zest, and lemon juice. Mix thoroughly until smooth and well combined. Taste and adjust sweetness if desired (add a dash of stevia or erythritol if needed, but the protein powder usually provides enough).
Gently fold in half of the mixed berries into the quark mixture.
